Neville’s Healthy Singapore-Inspired Noodles.
Feel free to add peppers, onions, or whatever flavorful veggies you desire! I just used what was in my fridge/freezer, and this turned out to be a delicious dish… A comforting end to an exciting, wonderful, tiring first week!
(Makes two small servings or one oh-so-hungry serving)
-One packet spaghetti-style Tofu Shirataki noodles (unlike the regular shirataki noodles, these actually have calories… 100 per pack! Scandalous!)
-1 c broccoli, chopped semi-finely
-1/4 c frozen edamame
-1 serving #Gardein “beefless” tips
-1 tbsp tamari (adjust to taste)
-2 tsp mirin
-About 1 1/2 tbsp curry powder
-About 1/2 tsp chili powder (again, adjust to taste)
-Oil for the wok
-Prepare your shirataki noodles:
-Pour out the package liquid
-Rinse them well in cold water
-Microwave them on a plate for about a minute (add 30 seconds if your microwave is on the older side)
-Dry them very well with paper towels. Set aside.
-Next, oil your wok and stir-fry your veggies and Gardein, being very careful not to have very much excess liquid in the wok at any point:
-Turn on the heat to high
-Add the frozen veggies first, letting them thaw for a minute or two.
-Add about the first tsp of Tamari
-Add the broccoli and another tsp of Tamari. Once it evaporates, add the mirin, and cook until the veggies are crisp-tender
-Add the noodles, the other 2 tsp of Tamari, the chili powder, and the curry powder.
-Continue cooking on high heat, stirring constantly, until the noodles have a fairly dry texture. Enjoy the spicy, flavorful noodle goodness! (And, savor the fact that, all things considered, this is a pretty healthy way to enjoy a massive pile of noodles.) 🍜
