Simple Quinoa Stir-Fry with Kale and Edamame!
Healthy, flavorful, easy; this dinner was all of the things I love in a recipe! Also, the quinoa I used, Keen One, is produced by a local Boulder company that sources their quinoa fair-trade, and it was delicious! I know there’s been some quinoa drama in the news lately, and since I’ve never been to Bolivia, and thus don’t know what the real story is regarding how the expanded quinoa market is affecting local people, I figured - why not support some friends on the Front Range who are trying to do the right thing?
-1 pack Keen One Quinoa, prepared to package directions
-1 large bunch Lacinto kale, sliced chiffonade
-1/2 c edamame beans
-4 cloves of garlic, crushed and minced (adjust if you aren’t garlic obsessed)
-2 tbsp shoyu (good soy sauce)
-1 1/2 tbsp mirin (Japanese cooking wine)
-1 tbsp ginger juice
-2 tsp Sriracha sauce
-1 tbsp coconut oil
Cook quinoa as to package directions. In a large skillet, heat the coconut oil on medium-high, and sauté the garlic until golden and fragrant. Add the kale, shoyu, and mirin, and cover with a lid until the kale about halved in volume. Add the ginger juice, and sauté for another minute. Gently fold in the quinoa, edamame, and Sriracha. Serve hot, and enjoy, preferably while watching/making fun of The Bachelor with friends!
